These beautiful fresh ingredients are what you need: sweet potato, coconut oil, sea salt and cracked black pepper. Avocados, limes and coriander.
Preheat the oven to 225C (fan forced). Line a large baking tray with parchment paper.
Cut the sweet potatoes into sticks, about 1cm to 1.5cm wide.
Place sweet potato into a large mixing bowl, pour over melted coconut oil season with salt and pepper, toss to combine.
Transfer the sweet potatoes onto the prepared baking sheet ensuring they are evenly spread and not stacked on top of each other.
Bake for 35-40 mins turning every 10 minutes to prevent burning.
In the meantime, prepare the avocado dip:
In a food processor, mix the ripe avocado, fresh lime juice, coriander and salt and pepper. Mix until it becomes a smooth texture.
